Photos are not exact representations of the prepared recipe. 1 cup whole wheat spaghetti 16 oz. beef, slightly thawed 2 tsp. olive oil ½ cup onion 1 cup mushrooms ¼ tsp. black pepper ½ tsp. coriander 1 tsp. parsley, chopped ¼ tsp. nutmeg ½ tsp. garlic, minced 2 tsp. mayonnaise (regular) ¾ cup water 8 tbsp. fat-free sour cream | |
| Cook and drain spaghetti. Cut beef into long, thin strips. Heat olive oil in a large sauté pan. Sauté onion, mushrooms, black pepper, coriander, parsley, nutmeg, and garlic. Add beef and mayonnaise. Dilute with water. Reduce heat and simmer for 30-40 minutes or until beef is tender. Add sour cream. Stir well. Pour over spaghetti.
Serves four. One serving equals 1 protein, ½ vegetable, 1 starch, 1 fat, and ½ free exchange. | |
