Photos are not exact representations of the prepared recipe. ½ onion, chopped ½ cup green or red pepper, chopped 1 cup zucchini, chopped ½ cup mushrooms, chopped 1 cup spinach, torn into pieces 8 medium eggs black pepper to taste Flavo-Magic™ to taste ½ cup (4 oz.) Swiss cheese, shredded 8 slices diet bread | |
| Coat a large nonstick skillet with nonstick cooking spray. Heat skillet until warm. Add onion and pepper and cook for 2 minutes. Add zucchini, mushrooms, and spinach, stir for 7 to 10 minutes, then set aside. Coat another skillet with nonstick cooking spray and heat. Beat eggs in a medium bowl and season with pepper and Flavo-Magic™. Pour egg mixture into the skillet and cook for 2-3 minutes. Add Swiss cheese and stir until melted. Stir in cooked vegetables and heat for 1-3 minutes or until egg is set. Divide egg into four sandwiches using diet bread.
Serves four. One serving equals 1 protein, 1 vegetable, 1 starch, and 1 dairy. | |
